SUINO DELLA MARCA (Le Marche-native pig) was born over 15 years ago of a three-way crossbreeding scheme using a native breed for rusticity (CINTA SENESE), a breed with strong maternal aptitude (LARGE WHITE ITALIANA) and a breed with proper meatiness (DUROC ITALIANA). The result is a specific genetic strain. The main player of this project is currently Impronta Verde, a company owned by Baldi Srl in Jesi.

Pigs are raised half-wild: through meticulous work it is finally possible to identify a pig that is 100% Le Marche-native, an animal fully in tune with the natural character of this territory. By matching excellent meat, top quality and valuable organoleptic properties together with the traditional processing by Cotteria Magrì, a cooked ham for true connoisseurs and gourmets is born.

The History of Our Region's Ancient Culinary Art

Cured meat is a traditional part of our region’s peasant history. Up to the early 1970s, Le Marche still had a strong penchant for domestic pig farming, as pork meat and, most importantly, fatty parts granted access to food over the whole year. The tradition of winter salting at home was maintained until the early 2000s and, even today, many enthusiasts try their hand at making sausages, loins, hams and cooked meats such as porchetta (Italian roast pork) and coppa di testa (head cheese). Cotteria Magrì has leveraged this legacy of aromas and flavours to bring it into its cooked and roasted products
